Typical O/W emulsion



Typical O/W emulsion from edible oil is prepared by membrane emulsification under following conditions. Appreciable amount of suitable emulsifiers are added to both dispersion and continuous phase. It is obvious that emulsion obtained has very uniform particle size distribution.

Water containing 1wt% of Tween 20 and 1wt% of NaCl

Membrane

Hydrophilic SPG Dm = 0.70mm

Pressure

P= 50kpa

Temperature

288 ~ 293K
